Matsutake King
Made with wild Matsu (Pine) take (Mushrooms) blended with
organic cacao nibs (raw chocolate beans).
Wild matsutake mushrooms are hard to harvest and therefore
the price is very high. Matsutake grow under pine trees and
are usually concealed under the fallen leaves. It forms a
symbiotic relationship with the roots of a limited number
of tree species. The unique flavor of matsutake is owed to
the rare conditions under which it grows, under the base of
pine trees between 20 to 60 years old and it never grows in
the same place twice. Their magnificently spicy aroma is similar
to cinnamon.

Raw crushed cacao beans are the more natural
form of chocolate, and ours come from a Fair Trade Peruvian
co-op. Blended with the matsutake in an organic apple cider
base, they add a wonderful richness to the mushrooms spicy
overtones.
An amazing dressing when blended with olive oil or apple or
cranberry juices. As a marinade, it is wonderful for white
fish when mixed with canola oil, and great with chicken.
Candy Cap
MokaCandy cap mushrooms, scientifically known as Lactarius
rubidus, are among the most deliciously fragrant mushrooms
you could ever hope to find. When fresh they don't look or
smell like much, but when dried they have a pungent odor of
butterscotch or maple sugar. The mushroom caps are burnt orange
to reddish brown and range from 50 cent to silver dollar coin
size. They only grow in the western United States, and are
not able to be cultivated. They are definitely a delicacy,
fetching up to $200 per pound.
In this recipe, candy caps are mixed with
organic & Fair Trade espresso and cocoa powder in an organic
apple cider base with a mix of organic herbs.
Excellent for a meat marinade when mixed 1 Tbs concentrate
with ¼ cup olive or canola oil. Also use as a dipping
sauce for bread, or blend with tomato sauce and served over
pasta with Parmigiano Reggiano.
Porcini Grey Salt
Wild harvested porcini mushroom powder with French gray salt.
Porcini mushrooms are a rich flavored, full aroma, meaty mushroom
that is amazingly versatile - delicate enough to give grace
to an elegant stew or sauce, and yet vigorous enough to stand
up to something as flavorful as a thick grilled steak.

The French salt used has a light gray color
characteristic of Guerande sea salts. It is 100% natural,
unrefined sea salt carefully stone ground to be easily dispensed
in a shaker. Its high mineral content gives a wonderful flavor
as its lower sodium content makes it much healthier than mined
or refined salts. Neither treated or washed, it is totally
natural and can be used in products that are labeled Organic.
This salt is certified organic by France's Nature & Progrés.
This is the most rigorous salt certification process, which
equates to purity and quality. (NOTE: The USDA does not allow
any Salt types to be labeled as Organic in the United States.)

Wild harvested lobster mushroom powder with a pink salt blend
from Bolivia, the Himalayas, and Hawaii. Fantastic paired
with seafood, South Asian cooking, or rich cream sauces over
pasta.

Rich and buttery wild Black
Trumpet mushroom powder, paired with Pacific and French sea
salts and black pepper. This is the ultimate all around salt,
with plenty of rich flavor and just a hint of heat from the
pepper. One of our customer’s favorites.
