Hot Chocolate. Satellite Organic.
 

Satellite Organic Hot Chocolate is absolutely the best that I can possibly make.

I started with organic, Fair Trade Criollo cacao powder from a Peruvian growers co-op. Criollo cacao is the original variety of chocolate grown by the Mayan people thousands of years ago. Today, less than 5% or the worlds chocolate crop is Criollo because it has small and very fragile pods. The other 95% of chocolate production are varieties that were bred for toughness and high yield - not for flavor. The Criollo cacao beans that I use is also organic, making it truly the finest chocolate in the world today.

I like to make my hot chocolate with a blend of half milk and half water, but you can make it richer with all milk, or lighter with water, soy, or rice milks as you prefer. Also fantastic added to coffee. However you enjoy it, remember that research has shown that cacao contains more antioxidant flavonoids than blueberries, red wine or green tea.

Satellite Hot Chocolate is available in several different blends:

Mayan Bittersweet Chocolate
65% Pure Cacao Shavings and Powder
For the Mayan Chocolate formula, I blended this chocolate slowly by hand with organic sugar, nonfat dry milk, and vanilla. I added as little of these ingredients as possible to bring out the maximum chocolate taste. I came up with my 65% chocolate blend - a true bittersweet chocolate with layers of secondary flavors. Each bag of chocolate also contains a piece of Madagascar vanilla bean to delicately infuse the chocolate with real vanilla aroma.

Cenca Dark Chocllate (vegan)
70% Pure Cacao Shavings and Powder
This dairy free (vegan) chocolate blend is made with 70% pure Criollo powder and shavings, and is full of bold dark chocolate flavor.

Potchilli Spiced Chocolate
65% Pure Cacao Shavings and Powder
Potchilli is the original Aztec work for smoked chilies ~ over the years this became reversed to chipotle, the word for smoked chile peppers today. Spiced with cinnamon, chipotle, and clove, this blend is gently warm and flavorful but not brash and hot (for you hot spice lovers, try Fuego Chocolate.)

Peppermint Chocolate
64% Pure Cacao Shavings and Powder
With organic peppermint extract and a smidge more milk and sugar than my regular blend, this peppermint chocolate is clean and smooth. It has a peppermint aroma combined with a flavor that is chocolate forward with a peppermint finish.

ZochiPalli Orange and Ginger Chocolate
65% Pure Cacao Shavings and Powder
ZochiPali orange and ginger chocolate is made with the same bittersweet level of chocolate as my classic Mayan blend, with the addition of organic orange granules and ginger providing a refreshing layer of flavor that complements the Criollo chocolates overtones. Do not expect artificial “Orange Crush” flavors – simply natural tastes for the best chocolate there is.

Fuego Hot Chili Chocolate
65% Pure Cacao Shavings and Powder
Fuego - the Spanish word for fire. Also, the name of a famously active volcano in Guatamala near the city of Antiqua, where smoke can be seen daily and larger eruptions have recently occurred.
Now it is also the name of our Hot Chili Chocolate. The Fuego Chocolate takes over where our popular Potchilli Spiced Chocolate leaves off. The Potchilli Chocolate has a warm and flavorful chili blend, tempered with vanilla, cinnamon and clove. The Fuego Chocolate deletes the clove and adds cayenne and paprika.

How hot is it? In a word, it depends. Because it is a hot chocolate, the taste can vary with how you make it. Remember that water can spread hot chili tastes, while milk can sooth hot mouths.
